Under the Lotus Tree: Traditional Sichuan MaoCai is Now an Intangible Cultural Heritage

The traditional cooking method of Sichuan MaoCai from “Under the Lotus Tree” has been officially recognized as an Intangible Cultural Heritage. This marks over 100 years of Sichuan food culture being protected and celebrated.

A Tradition That Began in Guangyuan, Now Shared Worldwide

In the early 1800s, people in Sichuan developed a new way of cooking—MaoCai. “Mao” means “to boil quickly”. This method made food flavorful and tender.

Under the Lotus Tree, MaoCai started in Guangyuan and spread across Sichuan. It became especially popular in Chengdu. Today, this dish is loved both in China and around the world.

Four Generations of Heritage

The skill has been passed down through four generations. Jia Guojin, the 4th-generation inheritor, invited his grandfather and mother—both earlier inheritors—to teach the traditional method in Chengdu.

In 2011, the first Under the Lotus Tree store opened in Chengdu.

By 2015, the brand had a headquarters.

In 2016, stores opened across China.

In 2017, they went global with stores in Malaysia and the U.S.

The brand also started a training school and built a supply chain.

So far, Under the Lotus Tree has:

  • Helped over 2,000 small business owners
  • Created more than 14,000 jobs
  • Opened a MaoCai Museum in Chengdu
  • Plans to open 10,000+ stores worldwide in the next 5 years

New Store Designs for New Generations

Under the Lotus Tree keeps improving. Besides community, school, and mall stores, they now have new “Trendy Stores” designed for young people. The first opened in Chengdu’s Taikoo Li area and quickly became popular.

Hundreds of stores have also been upgraded with better design, food, and service.

Protecting Tradition, Growing Together

Under the Lotus Tree uses modern methods to protect traditional taste. They use stainless steel baskets and improved cooking equipment. This makes the food consistent and easy to replicate.

They offer full training through their “MaoCai University” and provide easy-to-use management guides. This helps store owners run their businesses smoothly.

The brand is committed to promoting Sichuan food culture. They welcome more people to join them in sharing China’s food heritage with the world.
